Chandrakala

Chandrakala is one of those sweets that does not come up in conversation often. Not as famous as Mysore Pak, not as everywhere as ladoo. But in Tamil Nadu, in the homes and temples where traditional sweets still matter, Chandrakala has always had its place. A soft outer shell, a filling of A2 paalkova, fried gently and finished with a dusting of fine sugar, it is the kind of sweet that makes someone stop mid-bite and ask what it is.

The problem with most sweets like this, when you buy them from shops or get them in festival boxes, is that they are made with maida. And refined sugar. And often vanaspati. The result is something that tastes sweet but leaves a heavy, slightly greasy feeling.

Ours is different. Our Chandrakala is made with whole wheat flour or rice flour (no maida) and sweetened with natural sweeteners, not refined white sugar. The filling inside is made from A2 paalkova. Fried in cold pressed groundnut oil, not in cheap shortening.

No artificial colour. No preservatives. Made in small batches and packed fresh.

The shelf life is short, ten days, because there is nothing in it to make it last artificially longer. Order close to your occasion for the best experience.

We are not going to say a sweet is a healthy food. It is not. But there is a real difference between what goes into this Chandrakala and what goes into most commercial versions.

No maida. Maida is refined wheat flour that has been stripped of everything the rice originally had. It is cheaper, it fries more smoothly, and it has a softer texture which is why most sweet shops use it. But it contributes nothing good. Our Chandrakala uses whole rice or rice flour. The outer shell has a slightly different texture which is less uniform, more real.

No refined sugar. The filling is sweetened with A2 milk. The taste of the filling reflects this. It is warm and rounded, not flat and overly sweet.

No vanaspati or palm oil. Fried in cold pressed groundnut oil. The outer shell does not leave a greasy film on your fingers the way vanaspati-fried sweets do.

No artificial colour. What you see is the colour of the ingredients - the golden-brown of the fried shell, the dark filling visible where it shows. Nothing has been added.

A sweet worth giving. When you include this in a festival box or send it as a gift, you are giving something made without shortcuts. That matters.

Best before: 10 days from packing at room temperature

Keep in a cool, dry place. Keep the box closed when not in use. Do not refrigerate as cold temperatures change the texture of the fried outer shell and the filling becomes firm and dense.

Keep away from direct sunlight and heat sources.

Order close to the occasion. Ten days is enough for most gifting and festival purposes if you plan the order date correctly.
