You know when you cut open a pomegranate and the seeds are that deep, almost glowing red? And the juice runs before you have even touched anything? That is a fruit that has been grown well, picked at the right time, and not rushed.

Most pomegranates you find in shops and supermarkets are picked before they are ready so they survive the long journey through the cold chain. They arrive looking fine but taste pale. The seeds are light pink when they should be deep red. The juice yield is low.

Pomegranate has been eaten in Tamil households for generations. It shows up at religious ceremonies, in juices for people who are unwell and simply as a fruit that families keep at home because children eat it willingly and everyone knows it is good for them.

The colour of the seeds tells you a lot. Deep red means the fruit was allowed to ripen properly. Pale pink usually means it was picked early. The flavour is sweeter, the juice is more and the arils hold their shape better when the fruit has ripened naturally on the tree.

Our pomegranates are grown without chemical sprays. Chemical-free farming means the fruit develops at its own pace, in soil that has not been pushed beyond what it can naturally do. The result is a fruit that tastes the way pomegranate is supposed to taste.

Keep at room temperature away from direct sunlight if you are going to use within two to three days. The fruit will continue to ripen slightly and the arils will be at their best.

For longer storage, keep in the refrigerator. A whole, uncut pomegranate will keep well in the fridge for up to two weeks.

Once cut, store the arils in a clean, covered container in the refrigerator and use within three to four days.

Do not wash the fruit until you are ready to use it. Washing and then storing introduces moisture that shortens the fruit's life.

As a fruit: Cut in half and scoop out the arils with a spoon. Or score and break open under water — the arils sink and the pith floats, making it easy to separate. Eat as-is.

As a juice: Press the arils through a fine strainer. No blending needed, just press gently. Add a squeeze of lime and a pinch of rock salt for a traditional Tamil-style fresh juice that tastes different from anything packaged.

In rice dishes: Pomegranate arils scattered over curd rice add colour and a burst of sweet-tart flavour. A common festive touch in Tamil Nadu.

In salads and raita: Mix into cucumber raita or a simple salad of cucumber, carrot, and raw mango. The pomegranate cuts through the richness of curd and adds texture.

Why does organic pomegranate look different from supermarket pomegranate? Supermarket pomegranates are often picked before fully ripe so they survive transport and shelf time. They may also be wax-coated. Ours are picked when ready, with no coating or post-harvest chemical treatment. The skin may have minor marks or colour variation. The inside is what matters - deep red arils, high juice, full flavour.
