1. Classic Dal Tadka

The dish where hing does its most important work.

What you need:

1 cup toor dal, cooked soft

A pinch of myHarvest Farms Hing Powder

1 teaspoon mustard seeds

2 dried red chillies

Curry leaves

Turmeric and salt to taste

1 teaspoon ghee or oil

How to make it: Heat ghee in a small pan. Add mustard seeds and let them splutter. Add dried red chillies, curry leaves, and then the hing. Let it sizzle for just a second – that aroma tells you it's ready. Pour immediately over your cooked dal. Stir, adjust salt, and serve hot with rice. That one pinch of hing is what separates a good dal from an unforgettable one.

2. Sambar

No South Indian sambar is complete without it.

What you need:

1 cup toor dal

Mixed vegetables – drumstick, brinjal, tomato, shallots

2 tablespoons sambar powder

A small piece of tamarind

A pinch of myHarvest Farms Hing Powder

Salt and turmeric to taste

For tadka – mustard seeds, curry leaves, dried red chilli, oil

How to make it: Cook toor dal until soft. In a separate pot cook your vegetables with tamarind water, sambar powder, turmeric, and salt until tender. Add the cooked dal and let everything simmer together for 10 minutes. For the tadka heat oil, add mustard seeds, curry leaves, red chilli, and finish with a pinch of hing. Pour over the sambar. That final hing tadka is what gives sambar its soul. Serve with rice, idli, or dosa.
