Sprouted Kambu Flour

Kambu has been the rice of working people for centuries. Before urban kitchens switched to wheat and polished rice, kambu — pearl millet — was on the stove in most homes. Kambu kanji in the morning. Kambu roti for dinner. The rice that kept farmers in the field through long, hard days.

Most people today know kambu is good for them. What fewer people know is that sprouting it before grinding makes it noticeably better — easier to digest, less bitter in taste, and more of its goodness accessible to the body.

Our Sprouted Kambu Flour (முளைகட்டிய கம்பு மாவு) is made from naturally grown pearl millet from Tamil Nadu farms, soaked and sprouted before drying, then stone-ground in small batches without any additives, bleaching agents, or preservatives. The sprouting removes most of the bitterness that regular kambu flour sometimes carries, giving it a milder, slightly earthy flavour that works well in kanji, dosa, and roti.

Kambu is one of those rices that Tamil farming communities lived on for generations — not because they had no other choice, but because it genuinely sustained them well. The rice thrives in hot, dry conditions, which is exactly what much of Tamil Nadu experiences. It does not need heavy water or chemical input to grow well. And it gives back generously to whoever eats it.

It keeps you full for a long time. A bowl of kambu kanji in the morning is one of the most filling breakfasts you can have. The rice releases energy slowly — you will not be hungry again by mid-morning. This is why farmers who work long hours in the heat have always eaten kambu before heading out.

Good for the stomach. Sprouting removes some of the compounds in raw kambu that make it feel heavy or difficult to digest for some people. Sprouted kambu flour is significantly gentler on the stomach than regular kambu flour — which is why it is better suited for daily use, for children, and for people with sensitive digestion.

Good for managing sugar levels. Kambu releases glucose slowly compared to white rice or wheat flour. It does not spike and crash the way refined rices do. A savoury kambu kanji made without sweetener is one of the better breakfast choices for people watching their sugar. Please follow your doctor's guidance for your specific situation.

Rich in iron. Kambu has been given to women who feel pale or tired in Tamil households for a very long time — and there is good reason for it. The iron in kambu is more available to the body when the rice is sprouted, because sprouting reduces the compounds that block mineral absorption.

Gluten-free. Pearl millet contains no gluten, making sprouted kambu flour naturally suitable for those who need to avoid wheat.

A taste that your family will actually eat. Sprouted kambu flour is milder and less bitter than regular kambu flour. Children who have refused kambu kanji made from regular flour often take to the sprouted version without much resistance. The taste is genuinely different.

Best before: 3 months from packing date

Transfer to a clean, dry, airtight container immediately after opening. Keep away from moisture, steam, and direct sunlight. A pantry shelf or kitchen cabinet away from the stove is the right place.

In humid months — which covers most of the year in Tamil Nadu — refrigerating after opening extends freshness. Let the container warm to room temperature before opening after refrigeration, so moisture does not settle on the flour.

Fresh sprouted kambu flour has a warm, slightly earthy aroma. If the smell turns flat, sour, or musty — do not use it. Always use a dry spoon.

After opening: Use within 45 days at room temperature or 90 days if refrigerated.

1. Kambu Koozh 

Mix 2 tablespoons of sprouted kambu flour with 4 tablespoons of cold water until smooth — no lumps. Bring one tumbler of water to a rolling boil. Pour the paste in slowly while stirring continuously. Lower the flame and stir for 5–7 minutes until it thickens to a flowing consistency. Remove from flame. Serve savoury with a pinch of rock salt and a few drops of cold-pressed kadala ennai or gingelly oil — this is how it has always been done in Tamil homes. Or sweeten with karupatti if preferred. Serves 1. Ten minutes total.

The traditional Tamil Nadu way: Many families serve kambu koozh with a small bowl of buttermilk or a piece of raw onion on the side. The onion cuts through the earthiness of the kanji and balances it beautifully.

2. Kambu Dosa

Mix ¾ cup sprouted kambu flour, ¼ cup rice flour, finely chopped onion, green chilli, curry leaves, and salt. Add water gradually to make a thin pourable batter. Heat a tawa on medium-high flame. Pour a ladleful and spread quickly in circles. Drizzle a few drops of kadala ennai along the edges. Cook until the underside is firm and crisp. Flip and cook for 1 minute. Serve with coconut chutney. No fermentation needed. Makes 6–8 dosas.

3. Kambu Roti

Mix 1 cup sprouted kambu flour with chopped onion, curry leaves, green chilli, cumin, and salt. Add warm water gradually and knead into a soft, sticky dough — kambu dough behaves differently from wheat dough, it will be stickier and that is correct. Press small balls flat between two wet sheets of banana leaf or parchment paper. Transfer to a medium-hot dry tawa. Cook 3–4 minutes each side with a little oil. Apply nei when removing from the tawa. Serve with any kulambu or chutney. Makes 6–8 rotis.

What is the difference between sprouted kambu flour and regular kambu flour? Regular kambu flour is made by drying the rice and milling it directly. Sprouted kambu flour goes through a germination step first — the rice is soaked until it sprouts, then dried and milled. Sprouting reduces some of the compounds in raw kambu that block mineral absorption and cause bitterness. The result is a flour that is milder in taste, easier to digest, and one where your body can use more of what the rice contains. If you have tried regular kambu flour and found it bitter or heavy, sprouted kambu flour is a meaningful improvement.

Is kambu flour good for managing diabetes? Kambu releases glucose slowly compared to rice or wheat — it is one of the millets most often recommended for people watching their sugar levels. The sprouted form has a slightly lower impact than regular kambu flour. A plain savoury kanji without any sweetener is particularly suitable. Is it suitable for babies? From 8 months onwards, with your paediatrician's approval. Prepare as a very thin porridge — 1 teaspoon of flour cooked in 4–5 tablespoons of water for 5 minutes. Cool fully before feeding. No salt or sugar for babies under 12 months. The sprouted form is gentler on a baby's stomach than regular kambu flour.

Does it taste bitter like some regular kambu flour? Sprouted kambu flour is noticeably milder and less bitter than regular kambu flour. The sprouting process reduces the tannins that contribute to bitterness. Most people who have found regular kambu flour harsh on the palate find the sprouted version comfortable to eat regularly.

Can I make kambu dosa without fermenting the batter overnight? Yes. Because this is already processed flour (not whole rice), you can make a quick dosa batter by mixing it with rice flour and spices and cooking immediately. No overnight fermentation needed.

How should I store it? Airtight container, cool and dry place. Refrigerate in humid conditions. Use within 45 days at room temperature or 90 days if refrigerated. Always use a dry spoon.
