You know how your paati used to make ragi kanji from scratch - soaking the grain overnight, letting it sprout a little before grinding? She did not call it "sprouting." She just knew that was the right way to do it.

Our Sprouted Ragi Flour (கேழ்வரகு மாவு) is made from ragi grown by Tamil Nadu farmers who use no chemicals or pesticides on their fields. We soak the grain, let it sprout fully, sun-dry it the natural way, and stone-grind it fresh in small batches. No bleaching. No preservatives. No additives of any kind. Just ragi, done the right way.

The difference shows up the moment you open the pack. Our flour smells warm and slightly malty; the way freshly ground ragi should. That aroma is your sign that the grain has been processed properly and recently.

It is one of the best sources of calcium in any grain. Better than most grains you can find in your kitchen, which is why mothers across Tamil Nadu have always given ragi kanji to children and new mothers especially.

Sprouting makes it easier for your body to use. When ragi is unsprouted, some of its goodness stays locked inside the grain and passes through without being absorbed. Sprouting unlocks that. Your body gets more from every bowl.

It is gentle on the stomach. This is why it has been used as baby food for generations. Sprouted ragi is easier to digest than regular ragi which is also why mothers recovering from delivery, or anyone with a sensitive stomach, finds it sits well.

No preservatives means storage matters a little more than with commercial flour. Here is all you need to do.

Transfer the flour to a clean, dry, airtight container the moment you open the pack. Keep it away from the stovetop, steam, and afternoon sun. A pantry shelf or kitchen cabinet works well. Always use a dry spoon; even a slightly damp spoon can spoil the flour faster than you expect.

Fresh sprouted ragi flour smells earthy and slightly malty. If it smells flat, sour, or has clumped hard, do not use it.

After opening: Use within 45 days at room temperature, or 90 days if refrigerated.

1. Ragi Kanji (கேழ்வரகு கஞ்சி) — the one recipe you need

Mix 2 tablespoons of sprouted ragi flour with 4 tablespoons of cold water until completely smooth. Bring one tumbler of water or thin milk to a boil. Pour the ragi paste into the boiling liquid slowly while stirring. Lower the flame and keep stirring for 5–7 minutes until it thickens. Sweeten with karupatti or panangarkandu. A small spoon of nei before serving makes it even better. That is it. Ten minutes, one bowl.

For babies from 8 months: 1 teaspoon flour in 4 tablespoons of water or breast milk. Cook for 5 minutes on low flame. Cool completely before feeding. No salt or sugar for babies under 12 months.

2. Ragi Dosa

Mix ¾ cup sprouted ragi flour, ¼ cup rice flour, chopped onion, green chilli, curry leaves, and salt. Add water to make a thin batter like buttermilk consistency. Spread thin on a hot tawa, drizzle oil on the edges, cook until crisp. No fermentation needed. Serve with coconut chutney.

3. Ragi Ladoo

Dry roast 1 cup sprouted ragi flour on low flame for 3–4 minutes until the aroma deepens. Off the heat, mix in 3 tablespoons of melted nei, ½ cup powdered karupatti, and a pinch of cardamom. Shape into small balls while warm. Makes 10–12 ladoos. Keeps for up to 10 days in an airtight container. Purchase ready to eat ragi ladoo from us here.

4. Savoury Kanji (for sugar management)

Make basic ragi kanji using water, no sweetener. Add a pinch of rock salt, a little jeera powder, and a squeeze of lime. A spoon of cold-pressed coconut oil at the end makes it smooth and filling. Good for anyone watching their sugar levels.

What is the difference between sprouted and regular ragi flour? Regular ragi flour is just dried grain that has been milled. Sprouted ragi flour is soaked until the grain germinates, then dried and milled. Sprouting makes the flour easier to digest and allows your body to absorb more of the goodness in the grain. The taste is also milder; less of the bitterness some people notice in regular ragi.

Is this good for babies? Yes, from 8 months onwards. Make a thin porridge using 1 teaspoon of flour cooked in water or breast milk for 5 minutes. Cool completely before feeding. No salt or sugar for babies under 12 months. Always check with your paediatrician when introducing new foods.

Is it safe after a C-section? Yes. Sprouted ragi is easy to digest and the fibre helps keep digestion moving — which matters especially after a caesarean. Keep the preparation thin and smooth in the early weeks.

Does it help with breast milk production? Ragi has been part of traditional postpartum diets in Tamil Nadu for generations, given specifically to new mothers to support their recovery and milk supply. We would not call it a medicine, but it has been trusted food for nursing mothers for a very long time.

Can I use this instead of wheat flour? For kanji, dosa, ladoo, and traditional South Indian preparations — yes, fully. For baking (cakes, bread), ragi does not behave like wheat flour because it has no gluten. You can mix 25–30% ragi into wheat flour for baking to add nutrition while keeping structure.
