A rice that used to show up at Chettinad weddings, at puberty ceremonies, at festival payasam, and in the kitchens of families who understood that some rices are just in a different category altogether.

That is Karuppu Kavuni. Black rice.

It fell away from most kitchens when polished white rice became cheap and easy. But a few farmers in Tamil Nadu kept growing it quietly, and it is slowly finding its way back to where it belongs.

Our Karuppu Kavuni Rice (Boiled) is organically grown by Tamil Nadu farmers using natural farming methods. No chemical fertilisers. No synthetic pesticides. The boiled variety is parboiled before milling, which means the rice holds together better in cooking and works well for everyday meals.

When you cook it, the colour changes the entire pot. The rice is slightly chewy and earthy. Payasam made with it is the kind that gets talked about at the table.

Soak for about an hour before cooking. Use a little more water than you would for regular white rice. The extra time is worth it.

The dark colour of Karuppu Kavuni is not decoration. It comes from within the rice itself, due to the compound called Anthocyanin. The same kind of deep colour you find in jamun and purple grapes. This rice was given at important moments like puberty, recovery, and special occasions because it was considered something different from ordinary rice.

The rice is less processed than polished white rice. The outer bran layer is largely intact. That is where most of the rice's goodness lives, and it has not been milled away.

Karuppu Kavuni is naturally gluten-free. It is filling without being heavy. The slightly chewy texture means you eat more slowly and feel satisfied with less.

Chettinad families have made payasam with this rice for generations. Girls entering puberty were given kavuni puttu. The rice has a long, specific history of being given to women and to those who needed rebuilding. We are not making medical claims. Best before: 6 months from packing date

Transfer to a dry, airtight container right after opening. Keep away from moisture, sunlight, and heat. A pantry shelf or kitchen cupboard is fine.

Because the rice has no chemical coating, insects can appear if stored improperly. This is a good sign, not a bad one. It means the rice is genuinely natural. Place a dried vasambu stick or a few dry red chillies inside the container. Sun-dry the rice once in a while, especially during humid months. This is the traditional storage method and it works well.

If you see insects, sun-dry the rice, sort through it, and continue using it normally.

1. Kavuni Arisi Payasam - the classic

Soak 1 cup of Karuppu Kavuni rice for 1 hour. Pressure cook with 3 cups of water for 5 to 6 whistles until very soft. In a thick-bottomed pan, heat a small spoon of nei. Add the cooked rice and stir. Add thick coconut milk and karupatti or panagarkandu. Stir on a low flame until the payasam comes together. The colour will be a deep purple and the taste will be rich and slightly nutty. Add cardamom and cashews toasted in nei at the end.

1. Kavuni Pulao 

Cook like your regular pulao with vegetables. While you can notice the difference in color, this kavuni pulao gives a nutty flavor that makes it more aromatic and tasty.

Karuppu Kavuni has been a ceremonial rice in Tamil Nadu for centuries used in payasam at weddings, given during puberty rituals, and cooked for recovery periods. It was considered a rice for important moments. Most of this tradition is still alive in Chettinad culture where kavuni arisi payasam remains a non-negotiable part of the wedding menu.

Why are there sometimes insects in the rice? Because it has no chemical coating. That is the correct way for natural rice to be. Store in an airtight container with a dried vasambu stick inside. Sun-dry periodically during humid months. The insects are not a quality problem; they are a sign of genuinely natural rice.

How long does it take to cook? Soak for 1 hour first. Pressure cook with 2.5 to 3 cups of water per cup of rice for 5 to 6 whistles. It takes longer than polished white rice but the soak time does most of the work.
