Ghee has been in Tamil kitchens since before anyone needed a reason to eat it. But since so many people now ask why, here is the honest answer.

It is good for the gut. Pure bilona ghee is easy to digest and actually helps digestion rather than slowing it down. Many people who feel heavy or uncomfortable with commercial ghee or refined oils find that bilona nei sits much better.

It is good for growing children. There is a reason the first food for a Tamil baby is rice with nei. The fats in bilona ghee support brain development and growth in a way that refined oils cannot. A small spoon on a child's rice meal every day is one of the simplest things you can do for them.

It is safe if you are lactose-intolerant. The slow-cooking process removes all the milk solids, including lactose. What remains is only the fat. Most people who cannot drink milk can have pure bilona ghee without any reaction.

It is the right fat for South Indian cooking. Tadka, tempering, roasting - ghee handles high heat well without breaking down the way refined oils do. The tadka on your sambar smells entirely different when made in real nei versus refined oil. This is not just about taste. It is about cooking safely at the temperatures we actually cook at.

It is good for new mothers. Nei saadham, nei in kanji, nei in pongal - these are not just comfort foods. They are the traditional way of nourishing a new mother's body. The fats in bilona ghee support recovery in a way that aligns with what Ayurveda and Tamil postpartum tradition have always recommended.

It keeps skin and hair nourished. Eaten regularly, the healthy fats in bilona ghee show up in your skin and hair over time. And applied topically on dry lips, on a baby's skin, on the scalp, it has been used this way in Tamil households for generations.

Pure bilona ghee does not need to go in the refrigerator. Because all the milk and water have been cooked out during the clarification process, it is naturally stable at room temperature for a long time.

Keep the glass jar in a cool, dry place away from direct sunlight and away from the stovetop. A shelf or cupboard works perfectly. At room temperature the ghee will be semi-solid in cooler months and slightly more liquid in summer. Both are normal.

The most important thing: always use a dry spoon. Water is the one thing that can spoil bilona ghee. Keep a dedicated dry spoon near the jar. Never let steam get into the jar. Never pour ghee back in from a dish.

If your area is very hot for most of the year (above 35°C regularly), you can refrigerate the ghee. Just let it come to room temperature before you try to scoop it, since cold ghee is very firm.

If the ghee ever smells sharp, sour, or rancid (which is unlikely with properly stored pure ghee), do not use it.

After opening: Best used within 6 months.

1. Nei Saadham (நெய் சாதம்)

Hot rice. One generous spoon of A2 nei. A pinch of salt. A papad on the side. That is the whole recipe and it has been feeding Tamil families for centuries. The nei melts into the rice immediately. One spoon for a child, two for an adult. This is not a side dish. It is the main event.

2. Tadka for Sambar, Rasam, Dal

Heat 1 tablespoon of nei in a small pan until it shimmers. Add mustard seeds and wait for them to splutter. Add dried red chilli, curry leaves, and a pinch of perungayam. Pour directly over hot sambar or rasam. The difference between a nei tadka and a refined oil tadka is not subtle. Your nose will tell you immediately.

Add the tadka last, just before serving. Nei heated for too long in a pan loses its aroma.

3. Roti or Paratha with Nei

Apply A2 nei on freshly made roti while it is still hot off the tawa. It softens the bread and makes it more filling. This is how it was always done — the nei is not decoration, it makes the roti easier to digest and keeps you full longer.

4. Ghee for Babies (6 months onwards)

A quarter teaspoon of A2 nei mixed into soft rice or ragi porridge is one of the most traditional first foods in Tamil Nadu. Start small - ¼ teaspoon - and increase gradually. The nei adds calories and healthy fats that babies need for growth and brain development. Since all the milk solids have been removed during clarification, it is safe even for babies who react to regular dairy.

5. Festival Sweets — Mysore Pak, Rava Ladoo, Paal Kozhukattai

Real nei is not optional in traditional Tamil sweets; it is structural. Mysore Pak without enough ghee is not Mysore Pak. The amount of ghee in a traditional sweet recipe is there because it controls how the sweet sets, not just how it tastes. Use the right quantity and do not substitute with less thinking it is healthier.

The bilona process — four steps:

1. Fresh A2 milk is boiled and cooled
2. Curd culture is added; milk sets into curd overnight
3. Butter is slow-cooked over a gentle flame until milk solids settle
4. Golden ghee is strained and poured into glass jars while warm

Contains: Only milk fat. No milk solids, no lactose, no casein after clarification.

Free from: Artificial colour, artificial flavour, preservatives, vegetable oils, refined fats, emulsifiers, adulteration of any kind.

Colour: Natural golden from the milk of naturally grazed cows. May vary slightly between batches depending on season. Not a defect.

Texture: Semi-solid to grainy at room temperature. This is a sign of authentic bilona ghee. Liquefies fully when heated.

What is the difference between this ghee and the ghee sold in supermarkets? Supermarket ghee is made by a faster method - milk fat is centrifuged out and heated directly. No curd, no churning, no slow-cooking. It is quicker and cheaper to make, but skips the steps that develop the aroma, the grainy texture, and the nutritional depth of bilona ghee. Our ghee takes 25–30 litres of A2 milk per litre of ghee and hours of slow-cooking. The price reflects the process.

What does A2 mean — and does it matter? A2 refers to the type of protein in the milk. Most commercial dairy cattle in India today produce what is called A1 milk. Indigenous Indian breeds like Gir produce A2 milk, which many people find easier on the stomach. Since bilona ghee removes all milk protein during clarification, the A2 distinction mainly means the source cows are native Indian breeds raised in natural conditions - which influences how the milk tastes and how the ghee turns out.

The ghee looks grainy. Has it gone bad? No. Grainy or crystalline texture is actually the right sign for bilona ghee. It forms when the fat cools slowly after clarification which is how traditional hand-churned ghee behaves. Commercial ghee is processed to look smooth. When you heat the nei, the grains melt completely. When it cools again, it returns to semi-solid. This is normal.

Is it safe for people who cannot have milk? Most people who are lactose intolerant can have pure bilona ghee without any issue because the slow-cooking removes all the lactose along with the milk solids. What remains is only the fat. If you have a diagnosed casein allergy (not lactose intolerance), please check with your doctor before consuming.

Is it safe for babies from 6 months? Yes. A small amount of A2 nei mixed into soft rice or ragi kanji is one of the most traditional first foods in Tamil Nadu. Start with ¼ teaspoon and increase slowly. Always introduce one new food at a time and consult your paediatrician.

How can I tell if my ghee is adulterated? Heat a small amount on a spoon over a flame. Pure bilona ghee melts cleanly within a few seconds, turns a slightly deeper golden, and smells deeply nutty. No residue on the spoon. Adulterated ghee often smells flat, leaves residue, or takes longer to melt. This is a rough home check. For certainty, buy only from brands that are transparent about their source and process.
