Ask anyone who grew up in a Tamil household what made rice taste right, what made rasam smell proper, what made a baby's first solid food feel like something real — and the answer is always nei. A2 nei. The kind made from cows that were actually cared for, from milk that was actually good.

Our Pure A2 Cow Ghee (சுத்தமான A2 நெய்) is made the old way, the bilona method, from the milk of Gir cows. These are not the high-yield crossbred cattle used in commercial dairies. They are indigenous Indian breeds raised on natural fodder, without hormones or antibiotics.

The bilona process is simple to describe but takes considerably more time and milk than commercial ghee-making. The fresh milk is set into curd overnight. The curd is hand-churned with a wooden churner to separate the butter. That butter is slow-cooked over a gentle flame until the golden ghee separates and the milk solids settle. The ghee is strained and poured into glass jars.

That is it. No machines doing the work in seconds. No shortcuts.

It takes around 25 to 30 litres of A2 milk to make one litre of this ghee. That is why the price is what it is and why the quality is what it is.

What you will notice: The ghee will be golden, not a pale yellow, but the kind of golden that comes from cows grazing on natural feed. It will have a warm, nutty smell when the jar is opened. At room temperature it will be semi-solid and slightly grainy. That graininess is a sign of real bilona ghee, not a defect. It melts instantly in hot rice or on a hot tawa.

No colour added. No flavour added. No vegetable fat. No preservatives. No adulteration of any kind. Packed in glass because we will not put quality ghee in plastic.
