Our Panagarkandu Mysore Pak (பனங்கற்கண்டு மைசூர் பாக்) makes the right call on all three.

Panagarkandu - palm candy, made from the sap of the palmyra palm - is the sweetener. Not refined white sugar, not jaggery powder, not glucose syrup. Panagarkandu has a clean, mild sweetness with a very slight cooling quality that is entirely its own. It is the sweetener that Tamil grandmothers dissolved in warm milk for children and stirred into summer drinks not just for sweetness but because it was considered genuinely good for the body. Using it in Mysore Pak gives the sweet a flavour that refined sugar simply cannot produce; more refined-tasting, not less, with a lightness that makes it easier to eat without the sugary heaviness of commercial versions.

The flour is besan - kadalai maavu - the only flour Mysore Pak should ever have. No maida. No wheat flour. No fillers. And the fat is A2 cow ghee - not dalda, not vanaspati, not palm oil - from indigenous cow breeds, made the bilona way.
